A sushi restaurant in Boca Raton contacted MSA Appliance Repair because its Pitco gas fryer would no longer hold oil temperature and then stopped heating altogether. For a restaurant, a down fryer slows the whole line during service.
Our technician diagnosed the fryer on site instead of guessing at parts. The burners in a fryer like this cannot light unless the pilot system confirms a stable flame, so the pilot circuit was the first area to check.

Diagnosis
Diagnosis showed that the pilot sensor, the part that confirms the pilot flame so the burners are allowed to ignite, had failed. Without that signal the fryer could not light its burners or maintain temperature.

Repair
The failed pilot sensor was replaced right after the diagnosis. The fryer was then checked to confirm that the burners lit and the oil was heating again.

The fryer was heating again and the repair was closed the same day. The work took approximately 35 minutes on site.
